  • g sunflower mince

  • tbsp tomato paste

  • clove of garlic

  • red onion

  • tbsp olive oil

  • tsp oregano

  • chili flakes (optional)

  • g jarred kidney beans

  • medium sweet potatoes

  • pickled or fresh jalapeños

  • g cherry tomatoes

  • bunch of fresh coriander

  • limes

  • ripe avocado

  • tbsp nutritional yeast

  • tbsp pumpkin seeds

  • tsp salt

  • tsp pepper

  1. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit) using convection.

  2. Peel and finely chop the onion and garlic clove.

  3. Sauté both ingredients in a pan with olive oil until translucent. Add tomato paste and sunflower seed mince. Season with salt, pepper, a little chili, and oregano. Roast for about 4-5 minutes, then remove from the heat.

  4. Rinse the kidney beans thoroughly and mix them into the mince in the pan.

  5. Peel the sweet potatoes and cut them into thin slices.

  6. Place sweet potato slices on a baking sheet (or oven dish) lined with parchment paper. Arrange cherry tomatoes on top and spread the ground meat mixture over them.

  7. Distribute jalapeño slices as desired and garnish with nutritional yeast, salt and a little olive oil.

  8. Place in the preheated oven and bake for approximately 25-30 minutes.

  9. Wash the limes thoroughly and cut them into quarters. Halve the avocado, remove the pit, and slice it. Wash the herbs thoroughly and chop them with your hands. Sprinkle them, along with a little more nutritional yeast, over the baked sweet potato nachos and serve.
