Preheat oven to 180 degrees fan.

Peel the onion and garlic clove and chop finely.

Sauté both in a pan with olive oil until translucent. Add the tomato paste and sunflower mince. Season with salt, pepper, and a little chili and oregano. Roast for about 4-5 minutes, then remove from the heat.

Wash the kidney beans thoroughly and mix them into the minced meat in the pan.

Peel sweet potatoes and cut into thin slices.

Place sweet potato slices on a baking sheet (or ovenproof dish) lined with parchment paper. Arrange cherry tomatoes on top and spread the mince mixture over the slices.

Distribute jalapeño slices as desired and garnish with nutritional yeast, salt, and a little olive oil.

Place in the preheated oven and bake for approx. 25-30 minutes.

Wash the limes thoroughly and quarter them. Halve the avocado, remove the pit, and slice them. Wash the herbs thoroughly and chop them with your hands. Sprinkle them over the baked sweet potato nachos along with a little more nutritional yeast and serve.
