Preheat oven to 180°C fan-forced.

For the fries, peel the sweet potatoes and cut them into sticks. Line a baking sheet with parchment paper and spread the sweet potato fries on it. Marinate with olive oil and sea salt. Bake in a preheated oven for about 25-30 minutes until golden brown.

Prepare the couscous according to the package instructions. Thoroughly wash the tomatoes, cucumber, mint, and parsley. Remove the mint leaves from the woody stems. Dice the tomatoes and cucumber, and finely chop the parsley (including the stems) and mint leaves. Combine the couscous with the diced vegetables and herbs, and season with olive oil, apple cider vinegar, lime juice, salt, and pepper.

For the avocado mousse, remove the pits from the avocados and mash the flesh with a fork until creamy. Season with lime juice and salt.

Serve and enjoy sweet potato fries with parsley salad and avocado mousse.
