Preheat oven to 180°C fan.

For the fries, peel the sweet potatoes and cut them into sticks. Line a baking sheet with parchment paper and arrange the sweet potato fries on it. Marinate with olive oil and sea salt. Bake in the preheated oven for about 25-30 minutes until golden brown.

For the salad, prepare the couscous according to the package instructions. Thoroughly wash the tomatoes, cucumber, mint, and parsley. Separate the mint leaves from the woody stems. Dice the tomatoes and cucumber, and finely chop the parsley, including the stems, and the mint leaves. Toss the couscous with the chopped vegetables and herbs and season with olive oil, apple cider vinegar, lime juice, salt, and pepper.

For the avocado mousse, pit the avocados and mash the flesh with a fork until smooth. Season with lime juice and salt.
