Preheat oven to 180° C fan.

For the fries, peel the sweet potatoes and cut them into sticks. Line a baking tray with baking paper and spread the sweet potato fries on it. Marinate with olive oil and sea salt. Bake in the preheated oven for about 25-30 minutes until golden brown.

For the salad, prepare the couscous according to the instructions on the packet. Wash the tomatoes, cucumber, mint and parsley thoroughly. Separate the mint leaves from the woody stalk. Cut the tomatoes and cucumber into cubes and finely chop the parsley, including the stalk, and the mint leaves. Mix the couscous with the chopped vegetables and herbs and season with olive oil, apple cider vinegar, lime juice, salt and pepper.

For the avocado mousse, remove the pits from the avocados and mash the flesh with a fork until creamy. Season with lime juice and salt.

Serve sweet potato fries with parsley salad and avocado mousse and enjoy.
